Meal Plan for November 12-18

Another week beginning. I can’t believe how fast the Fall is passing us by. Seems like it was just Summer yesterday.  After a cold beginning to November, we have had several really nice days in the 70’s. Wish it would stay that way. I hate cold weather.

Not much happening in my world this week. Just busy working. I did manage a new Squidoo lens on purple furbys. Funny thing, after doing the research on it, I fell in love with Furbys and ordered a pink one for myself. I guess I’m still a kid at heart. This week I’m giving you the recipe for Layered Mexican Bake. I adjusted the ingredients a little from the original version. You can get the original recipe here: http://www.recipe.com/layered-mexican-bake/

Layered Mexican Bake

1-2 pounds lean ground beef
1 chopped onion
2 chopped green peppers
2 tsp chili powder
1 tsp garlic salt
2-3 cups salsa
2 cups frozen corn
6  8-inch whole wheat tortillas
1  cup light sour cream
2 cups shredded cheddar cheese
  • Preheat oven to 375 degrees.
  • Brown beef, onions and peppers on medium-high heat.
  • Stir in spices.
  • stir in salsa and corn and simmer for 5 minutes.
  • Spread 2 cups of meat mixture in bottom of baking dish.
  • Top with 2 tortillas and add another cup of meat mixture, then sour cream, then cheese, then 2 more tortillas, meat mixture,  cheese, the last 2 tortillas, and meat mixture.
  • Cover dish with tin foil and bake for 30 minutes.
  • Remove foil, sprinkle rest of cheese on top and bake 5 more minutes without the foil.

    Fast food Friday sounds like a good thing to do once a month LOL

  2. Yeah, it’s been a tradition in my family for years now. It’s a fun way to welcome in the weekend and something to look forward to.

    I make a great spinach lasagna (with 4 cheeses) but haven’t done one in years due to rising price of cheese… perhaps its time I dig out that old recipe and revive it for the holidays!

    I remember Furbys, and I think my daughter just got one for her birthday over the summer? I love come-back toys 😉
    It’s getting cold here in Michigan – a nice hot chicken pot pie would hit the spot!

  6. I’m too old to have had Furbys as a child but I remember one of my daughter’s had one. I love come back toys too. Or toys that never go out of style like Barbies and Legos.
