Meal Plan for September 10-16

The weather has finally cooled off some here. It was nice enough to sit outside the last 2 days. And the butterflies are having a convention or something in my yard. I sat outside for about 30 minutes today and counted 18 butterflies (may were different species). I should have gotten some pictures but I didn’t think about it til later.

Not much else going on here in Cathy world. Hope everything is going well in your neck of the woods.

I’m giving you my recipe for Easy Bean Enchiladas. Not sure where I originally got this, it’s just been kept in my recipe folder in my email since 2005. It’s a family favorite.
INGREDIENTS
1 (15 oz.) can of great northern beans, drained and rinsed (you can really use other beans too like kidney, navy or white beans)
1/2 cup salsa
1 cup frozen corn
1 teaspoon chili powder
1 dash hot sauce (more or less to taste)
6 whole wheat tortillas
1/2 cup low fat cheddar cheese, shredded
1 cup nonfat sour cream

DIRECTIONS
1. Drain beans and place in a medium sized saucepan. Mash slightly with a fork leaving some of the beans whole.
2. Add corn, salsa, chili powder, and hot sauce. Mix well. Heat on medium until bean mixture is hot.
3. Wrap tortillas in microwave safe plastic wrap and microwave on high for 40 seconds.
4. Spoon bean mixture down center of each tortilla. Sprinkle with cheese. Top with sour cream. Roll up tortilla and serve.
