Meal Plan Monday for February 27-March 4

Wow, it’s been awhile since I did a Meal Plan Monday or even updated this blog.

Lets just say I got a little overwhelmed with life.  I was out of town for about a week and then had lots of doctors appointments.

After going 3+ years without health insurance, I knew there might be some surprises when I finally got insurance and got a physical. Just didn’t think there would be so many of them.

I won’t go into detail of all the things the doctors found wrong with me, cos I know there is nothing more boring than to read about someone else’s health problems. Let’s just say it was a wake up call.

I’m now on a mission to eat better. Of course it isn’t always easy when you have a family that is perfectly happy eating the way they always have.

So I’m actively trying to find healthy AND good tasting meals to serve my family.

My recipe is for for Crock pot Cabbage Casserole. I actually make this on the stove top sometimes too.

Crockpot Cabbage Casserole
6 cups bagged coleslaw mix
1 pound extra lean ground beef
1 cup onion, chopped
1 cup long grain or brown rice
26 ounces lite spaghetti sauce
1 1/2 cups water
1/2 teaspoon pepper
1 teaspoon seasoned salt
1/4 teaspoon basil

Brown and drain ground beef.
Place half of the coleslaw mix in a crockpot.
Put ground beef over the top.
Evenly distribute onion, then rice over all.
Top with remaining cabbage, salt and pepper.
Combine spaghetti sauce, water, basil, pepper and seasoned salt; pour over cabbage.
Cover and cook on high heat for 4-5 hours or until rice is tender.
Stir occasionally, and add water during cooking time, if it is too thick.
Serves 6; 1 1/4 cups heaping is 4 Weight Watchers points.

    Hubs just found out that he’s got some health concerns as well so we’re changing out diets as well. It’s really difficult to change. Good luck!

    Yeah it isn’t easy. But I want to live to see my grandbaby grow up so it’s a good incentive for me.

    We do meal planning for very similar reasons. Since it’s just me and my 4 year old, if I say what do you want for dinner any given night the answer is bound to be chicken nuggets or pizza. She’ll eat healthy if I put it in front of her but I’m also indecisive myself. So much easier to plan and have everything on hand.

    Yeah planning ahead is the key. Otherwise it’s just too easy to order a pizza.

    Very true. I bought little mini 200 calorie pizzas at the store today. They cook faster than one can be delivered. We never eat a whole pizza and they are so dang expensive. Plus there is too much temptation to over eat.

    Do you use a meal planning site or just make up your own?

    I use my own but i do go to FoodDJ.com to get ideas sometimes.
    Good idea about the mini pizzas.
