Meal Plan Monday for October 3 thru October 9

Another week, another menu plan. First though, I want to thank those who showed concern for my mother. She is still in the hospital but is expected to be released this week to a nursing home. She’s not happy about that but she requires 24 hour care now and I feel guilty that I can’t give that to her. If she can get her strength back up, the nursing home will just be temporary and she will eventually be able to go back home.

The recipe I want to share with you this week is Chicken Taco Soup. I like this soup because it’s spicy, filling, cooks fast and easy to make.

Chicken Taco Soup

1 pound shredded, cooked chicken*
2 cups cooked kidney beans
2 cups salsa
6 cups chicken stock
1 packet taco seasoning
2 cups crushed tortilla chips
shredded cheddar, and sour cream if desired

  • Combine chicken, beans, salsa, chicken stock and taco seasoning into a soup pot.
  • Bring to a boil and reduce heat to a simmer.
  • Cook for about 15 minutes.
  • Top with crushed tortilla chips, and cheddar and sour cream if desired.

*I always cook up a large batch of chicken breasts when I get home from the store, shred them and keep it all in a large zip lock bag in the freezer to pull out for recipes like this.
