Meal Plan for August 13-19

How has your week been? It’s been rainy here. I know many areas of the country badly need rain and I wish I could give you some of ours. I’m sick of it!

Ok, here is the dinner meal plan for this week.

Mexi-Chicken Crockpot (see the recipe here)
Ham and Cheesy Potatoes
Skillet Chicken Terriyaki
Fast Food Friday
Grilled Steak
Baked Potatoes
Cube Steak and Gravy
Mashed Potatoes
Green Beans

I’m giving you the recipe for Skillet Chicken Noodle Teriyaki. What I like about this recipe is it’s easy to keep most of the ingredients on hand in the pantry and use on a busy day or when you don’t have time to get to the store.

4 pkgs (3 oz ) ramen noodles without seasoning packs
1 T oil
2 thinly sliced bell peppers
1 thinly sliced onion
4 t teriyaki sauce
1 1/2 c water
2 t soy sauce
2 cans (4.5 oz each) white chunk chicken breast

Cook noodles.
Heat oil in skillet over med-high heat.
Add onion and peppers and cook til just tender 10-12 minutes.
Reduce heat to med-low.
Stir in water, teriyaki sauce and soy sauceand chicken.
Cook, stirring til hot.

  1. I’m stopping by for a visit from Organizing Junkie today.
    We’ll take the rain but afterwards the humidity has got to go!
    It’s another 107 degree day in Las Vegas. Man! Am I looking forward to cooler temps. Unfortunately, we don’t usually start cooling down till late September or October.
    Your menu for the week sounds delicious!
