Meal Plan for August 27-September 2

I hope your week has started off well. We are still getting lots of rain here. I’m sure the tourists are loving it considering they are paying for sun and fun on the beach and all it seems to do this summer is rain. Oh well, you can’t control mother nature.

Itailian Pepperoni Wraps

I’m giving you the recipe for Italian Pepperoni Wraps. I originally got this recipe from Woman’s World Magazine but I did mine somewhat differently than they did theirs. Mine turned out really yummy so that’s the recipe I’ll give instead of the one found in the magazine.

If you follow my blog, you know that lately I have been on a tortilla bowl kick. You can see that post here.  Anyway, since I have so many tortillas in the house, this recipe was perfect.

Italian Pepperoni Wraps
1/4 cup creamy Italian salad dressing
4 large (I use 10″) flour tortillas
6 oz. sliced pepperoni
1 tomato, sliced
6 oz sliced mozzarella
fresh spinach leaves (approximately 1 cup)

  1. Preheat oven to 375 degrees.
  2. Spread salad dressing over the tortilla, leaving about half an inch border all around.
  3. Top each tortilla with equal amounts of cheese, pepperoni, tomato slices and spinach.
  4. Fold in tortilla sides, roll up from the bottom.
  5. Secure with toothpicks.
  6. Bake for 10 minutes or until golden brown.
  7. Remove toothpicks and cut in half before serving.

    I can see possibilities of other variations with this tortilla wrap theme!!

    1. I know! I’m thinking different spreads like maybe guacamole or ranch dressing, different cheeses and different lunch meats.
