Meal Plan for December 17-23

I usually ask how your week has been but if you are in the USA, you probably are as heartbroken as I am about the events at Sandy Hook School in Connecticut. I just cannot comprehend how anyone could kill innocent young children. I pray for all the families who lost loved ones including the killer’s family  who lost 2 members of their family that day. I can’t watch the news anymore because I just end up crying every time I think about this.

It has been a hard weak for me in a lot of ways and I was totally feeling sorry for myself until this tragedy happened and put things into perspective. What do I have to complain about? Everyone I love is healthy and still here with me (with the exception of my parents).

Okay, on to this week’s dinner menu:

I will give you my recipe for potato soup.

Cathy’s Potato Soup
1 onion, chopped
2 stalks of celery, chopped
6-10 (depending on size) potatoes, peeled and cut in bite size pieces
4 c chicken broth
1 Tbs parsley
1 tsp black pepper
1 tsp salt
3-4 pieces of fried bacon (save a tablespoon of bacon drippings too)
1 brick cream cheese (I use the low fat kind, ironic I know since I also use bacon drippings)
Instant Potato Flakes as needed
I usually make this in the crock pot and I cook it about 6 hours on low and then 1-2 hours on high. You may need to adjust the cooking time according to your slow cooker.

Lay cut veggies in crock pot and cover with chicken broth.

Add spices and cook for about 6 hours.

An hour or two before serving, cook up the bacon and crumble it into the soup. Add a spoonful of the bacon grease for seasoning.

Add the cream cheese and turn the slow cooker on high.

Stir occasionally until the cream cheese has melted into the soup.

Add potato flakes to thicken the soup. I add about a half a cup and stir it in. Give it a few minutes and add more if I want the soup to be thicker.
