Meal Plan for November 12-18

Another week beginning. I can’t believe how fast the Fall is passing us by. Seems like it was just Summer yesterday.  After a cold beginning to November, we have had several really nice days in the 70’s. Wish it would stay that way. I hate cold weather.

Not much happening in my world this week. Just busy working. I did manage a new Squidoo lens on purple furbys. Funny thing, after doing the research on it, I fell in love with Furbys and ordered a pink one for myself. I guess I’m still a kid at heart. Anyway, here’s the lens if you want to check it out:

Chicken Pot Pie
Layered Mexican Bake
Pepper Steak
Spinach Manicotti
Fast Food Friday
Grilled Steak
Mushrooms and Onions
Baked Potatoes
Cube Steak
Mashed Potatoes and Gravy
Green Beans

This week I’m giving you the recipe for Layered Mexican Bake. I adjusted the ingredients a little from the original version. You can get the original recipe here:

Layered Mexican Bake

1-2 pounds lean ground beef
1 chopped onion
2 chopped green peppers
2 tsp chili powder
1 tsp garlic salt
2-3 cups salsa
2 cups frozen corn
6  8-inch whole wheat tortillas
1  cup light sour cream
2 cups shredded cheddar cheese
  • Preheat oven to 375 degrees.
  • Brown beef, onions and peppers on medium-high heat.
  • Stir in spices.
  • stir in salsa and corn and simmer for 5 minutes.
  • Spread 2 cups of meat mixture in bottom of baking dish.
  • Top with 2 tortillas and add another cup of meat mixture, then sour cream, then cheese, then 2 more tortillas, meat mixture,  cheese, the last 2 tortillas, and meat mixture.
  • Cover dish with tin foil and bake for 30 minutes.
  • Remove foil, sprinkle rest of cheese on top and bake 5 more minutes without the foil.

  1. I make a great spinach lasagna (with 4 cheeses) but haven’t done one in years due to rising price of cheese… perhaps its time I dig out that old recipe and revive it for the holidays!

  2. I remember Furbys, and I think my daughter just got one for her birthday over the summer? I love come-back toys 😉
    It’s getting cold here in Michigan – a nice hot chicken pot pie would hit the spot!

  3. I’m too old to have had Furbys as a child but I remember one of my daughter’s had one. I love come back toys too. Or toys that never go out of style like Barbies and Legos.
