Hope everyone had a happy and safe week. My prayers are going out to those in the north east that were devastated by hurricane Sandy. We were hit but not too bad. It didn’t hit us directly, just went by us on it’s trek north. We did get 4 days of constant rain and some minor flooding and lots of wind. Not much damage though in this area, thank God.One thing that stupid hurricane brought in was the cold area. We went from the 80’s before the hurricane to the 50’s now. Brrr.
I got to show you my sweet little granddaughter in her Halloween costume. She was a ballerina cat. Isn’t she adorable? She had a great time trick or treating and now she keeps asking when will it be Halloween again.

I’m giving you my recipe for taco salad:
Large Flour Tortillas
1 pound lean ground beef
1 pkg of taco seasoning
Toppings of your choice. I use: shredded cheddar, black olives, tomatoes, salsa, chopped onions, chopped tomatoes, sour cream.
Cook ground beef and taco seasoning according to directions on taco seasoning package.
Make your taco shells. You can read about how I do that in this post here: What to do with tortilla bowl makers.
Add your toppings and enjoy. I make this buffet style where everyone can make their own taco salad and add their own desired toppings. Easy peasy.
