Meal Plan for October 8-14

How has your week been? Like most of the US, we went through a big cold front here. It was in the 80’s all last week and we had the air conditioner running. I woke up Sunday morning to 60 degrees and it never got any warmer. I guess Fall is really here.

This week I started getting orders in earnest for my personalized ornament business so that’s mostly what I worked on besides my usual websites. I did manage to get one squidoo lens done. You can check it out here if you are interested:

Beef Stew
Chicken-Broccoli Casserole
Beef and Broccoli Stir Fry over Rice
Mini Pizzas
Fast Food Friday
Grilled Steak
Baked Potato
Grilled Asparagus
Cube Steak and Gravy
Mashed Potatoes
Green Beans

I’m going to give you the easy recipe for Mini Pizzas. It’s not so much of a recipe as a way of doing it. I started making these when my kids were little because they could each make their own pizza to their own taste. Then I’d bake them for them and everyone got to eat what they like. Now my 3 year old granddaughter enjoys making her own pizza. It’s a little messy but she loves making it and will actually eat the whole thing.
Mini Pizza
Pita Bread (one for each pizza)
1 can of tomato sauce
Seasonings to taste (I use garlic salt and Italian Seasoning)
Pizza Toppings (use whatever you think your family would like):
Shredded Mozzarella
Chopped Ham
Chopped Onion
Chopped Green Pepper
Sliced Mushrooms
Sliced Tomatoes

Preheat oven to 400 degrees.
Spoon tomato sauce over pita bread and add seasonings, toppings and top with cheese.
Bake for 10 minutes or until golden brown.
