Wow, it’s April already? Wasn’t it just Christmas? This year is flying by!
For those of you who asked if I got my car, yes I did! Here she is:
This is my brand new 2012 Volkswagon Beetle. The first new car I have ever owned.
I have been wanting a Beetle since I was 2 years old. My mom said I would cry out every time I saw one and would say “That’s my baby car!”
Okay, I know this is corny but I name my cars. My Beetle’s name is “Buttercup”. My son says I’m a total dork but I don’t care.
That’s one of the cool things about getting older. You feel more free to do what you want and you just don’t care that much what others think.
Okay, enough about my new love.
On to this week’s menu plan:
My monthly dinner out with my oldest daughter.We will probably eat at Cracker Barrel.

Fried Potatoes and Onions
I’m going to tell you how I make my Salsa Chicken which is the easiest thing to make in the world.
Just stick a package of skinless, boneless chicken breasts into your crock pot and cover with a large jar of Salsa.
Cook according to how long your crock pot takes to cook it, I cook mine all day on low.
Sometimes I add a little water if it looks a little dry.
When done, serve over rice. Super easy!
