So, how’s your June going?
My son left for 2 weeks to visit his friend in Kansas. Although he’s an adult (21), I still worry about him and miss him.
A week from now, I too am hitting the road. I’m going with 2 of my best pals to visit another friend in New York City. Actually she lives outside the city but we plan on visiting the Big Apple while we are there. We will be gone 8 days.
This really is my year of travel as the year is only half over and this is already my 4th trip. I love to travel so I’m not complaining.

I wasn’t sure what to call the Giant Stuffed Burger. I used to make this in the 90’s for my family and I’m not sure why I stopped as we all loved it. Seems like it was called Stuffed Cheeseburger or something but when I googled the recipes for Stuffed Cheeseburger, I knew none of them were the same recipe.
Anyway, I remember it was pretty simple to make, so I’m going to wing it this week and hopefully I’ll do it right.
The ingredients were 1-2 pounds (depending how big you want it) of very lean ground beef , a cup of salsa and a cup of shredded mozzarella. I think you added an egg to the hamburger to help it hold together like a meatloaf.
You shape the half the hamburger into a circle and top with the mozzarella and salsa. Then you cover it with the second half of the hamburger and shape into a mound shape like a large meatball that’s flat on the bottom.
You bake this for about an hour or until no longer pink. Probably at 350 degrees.
Anyone remember making this or something similar?
I’ll let you know if it turns out as good as I remember it.
