Meal Plan Monday for March 5-11

Happy Birthday to me!! Today is my birthday so tonight I’m going out to dinner with my kids and grandbaby.

How was your week?

Mine was busy.

I think it’s definitely time to get a new car. I have been putting it off for a long time but Saturday night, on my way home from my monthly Bunco game, my 2000 Cadillac died on me. It’s been a good car but it’s breaking down more and more often.

Hopefully, next week I’ll be reporting that I bought a new car!

Ryan’s Grilled Lemon Chicken (my son makes the yummiest chicken)
Grilled Baked Potato
Green Beans
Wednesday
Spaghetti
Thursday
Bean Enchiladas
Friday
Fast Food Friday
Saturday
Grilled Steak
Broccoli, Cauliflower, and Carrots
Sunday
Shish-Ka-Bob made with beef, onions, red, and green pepper, mushrooms

Here is my simple recipe for bean enchiladas:

Bean Enchiladas
Can of Black Beans or Kidney Beans
Can of Corn
Small Jar of Salsa
Small Can of Enchilada Sauce
Small Can of Diced Green Chilies
1 Teaspoon Chopped Garlic
Package of Flour Tortillas
Package of Low Fat Shredded Cheddar
Carton of Low Fat Sour Cream
Chopped Green Onions

Preheat oven to 375 degrees.
Mix beans, corn, chilies, enchilada sauce, garlic and half the cheese together. Put a few spoon fulls of the mixture in a tortilla and roll up.
Place in a baking dish and pour salsa over the enchiladas.
Sprinkle the rest of the cheddar over them.
Bake for 20 minutes.
Top with sour cream and green onions.

  1. Happy belated birthday! I’m liking the idea of a menu planning Monday. I’m a bit too slack about that, and I eat less healthy food as a result.
