Meal Plan Monday for November 28 thru December 4

Did y’all have a nice Thanksgiving? We did. I cooked all day and put out the good china and silver and we all ate til we felt like busting. It seems like a lot of work for a 30 minute mealtime but we did have leftovers for lunch and dinner through Sunday.

I have a busy week full of running around doing administrative stuff (closing accounts, legal stuff, etc.) for my mom’s estate. It sure is complicated closing out someone’s life. That didn’t sound right but you know what I mean.

Taco Salad
Chicken Noodle Soup
Pepper Steak with Rice
Fast Food Friday
Grilled Steak


I’m going to give you my recipe for Chili.

1 pound lean ground beef
1 green pepper, chopped
3 large stalks celery, chopped
1 onion, chopped
1 clove garlic, chopped
1 large can diced tomatoes
1 can spaghetti sauce
1 can kidney beans
1 can black beans
1 teaspoon chili powder
1 teaspoon oregano
1 teaspoon black pepper

I actually just throw all the ingredients in my crock pot and cook on low all day. Simple, huh? I occasionally stir it up and make sure the ground beef is separated. We sometimes eat this with a few tortilla chips on top, and/or shredded cheddar and sour cream.

  1. Yeah we mix it up. Sometimes we get take out from a small local Mexican restaurant, sometimes Subway or Zeros ( a local sub shop), sometimes Chick Fillet. If I’m really strapped for money, I’ll get something off the dollar menu at Wendy’s.
