Meal Plan Monday for September 12 thru 18

I was afraid I wouldn’t have anything this week but fast food and microwave dinners. My 12 year old stove gave up the ghost last week.  I only had $400 to get a new stove and I really wanted a smooth top stove. That’s what my last one was and they are just so much easier to keep clean. I never want any other top of stove.

I checked several places and finally found a  floor model that was on sell at Best Buy for $360. It had 5 burners instead of 4. The middle burner is for keeping things warm. I really love that idea.

The oven is really nice too. You can preset it to start baking hours later and it also has an automatic off, which means it turns itself off when the timer goes off. Love that!

The only thing I don’t like about it is it’s white and I really wanted black. But at least now it matches my other appliances which are also white. I was hoping to gradually change over to all black appliances. But oh well.

Fast Food Friday

Grilled Steak
Baked Potato
Broccoli and Cheese

Fried Potatoes and Onions


I’m going to share my Chicken and Stuffing Casserole recipe:

Chicken and Stuffing Casserole
2 cups diced cooked chicken breasts
1 can cream of chicken soup
1/2 cups milk
1-1/2 cups chicken broth
1/2 cup chopped celery
1/4 cup chopped onion
1 egg
2 cups herbed stuffing mix
1 Tbs. parsley flakes

  • Spread chicken in bottom of 2-quart flat casserole dish.
  • Dilute soup with milk, pour over top of chicken.
  •  Cook celery and onions in broth until tender.
  • Make dressing by combining broth, celery, onions, egg and parsley flakes and stuffing.
  • Spread dressing on top of soup.
  • Sprinkle with paprika.
  • Bake at 350 for 35-45 minutes.

  2. Wow I can’t imagine going 2 years without a stove. I guess there are ways around it like your toaster oven and a microwave would help too.
